What I Ate Wednesday #2

This AM I headed to the gym at 4:30 am for some fasted cardio & a bit of abs before work-which of course wouldn’t have happened without my huge mug of black coffee (+ a little stevia).

I’m thinking of creating a love ballad to the drink, but for those of you who know me, know my voice is not the most pleasant thing to listen to (especially in the early am). So I’ll hold off.

I then headed home & ate my favorite breakfast I posted last week here.. Seriously, it’s a game-changer.

Seinfeld = the the greatest. My *adventure partner showed me this after our convo went somewhere along those lines when he asked what I wanted to eat.. But that’s another story…At work I was able to throw together a “big salad”. I kept adding ingredients that I had picked up & all the combinations ended up pairing perfectly! I highly recommend topping your big salad with the Orange Muscat Champagne Vinegar from Trader Joe’s! It’s a light, refreshing way to add a whole bunch of flavor- which is perfect for an afternoon pick-me-up. The wasabi peas add a bit of a crunch and help make this salad a little more hearty.I bought all the ingredients at Trader Joe’s – so here’s what my Trader Joe’s Big Salad looked like:

Wasabi Peas,Fat Free Feta,Sliced Turkey chunks,Pomegranate Seeds, Cruciferous Crunch Salad mix (bomb.com!) ,mixed baby greens & Orange Muscat Champagne Vinegar.

 

 

The below bars have basically changed my life. I keep these in my car for a quick grab after heavy workouts or for a quick snack. By mid-afternoon after teaching a few classes I was ready for a sweet treat, so I opted to grab one of the delicious Cookies N’ Cream Quest Bars.

 

I got home a little later than normal & threw together a small bowl of zucchini noodles, lean turkey, salsa & cottage cheese. This recipe takes me literally 5 minutes to make & is one of those dishes that I’m able to make in a single serving size. Simply cook up your lean ground turkey, shave the zucchini into a bowl (I microwave the shavings for 2 minutes) then top with the other ingredients. Delish!

After settling down & digesting some dinner, I sat & read my new book series I’m into Matched- by Allie Condie. Have any of you read it?Β

      1. Yes I have and I liked that kind as well! I like all of them actually, but I would say my top 3 are Double Chocolate Chunk, Banana Nut Muffin, and Chocolate Chip Cookie Dough.
